Description
Old vines carefully selected from the “St Pierre” plot, the Cuvée Saint Pierre aims to be highly complex with rare finesse. We prioritize quality, which is why we do not exceed 25 HL/ha in producing this cuvée, selecting only the finest berries.
Hand-harvested, the Cuvée Saint Pierre comes from old vines located on the hillsides.
Fermentation takes place in traditional tanks with daily pump-overs to extract maximum color. Then, after pressing the marc, the wine is transferred into barrels to undergo malolactic fermentation. The wine then undergoes a 12-month aging period in barrels that have already been used to age wine, in order to achieve subtle woody notes that add body and complexity to the wine.
A slight natural deposit of tartrate crystals and/or color/tannins may form over time. This deposit is entirely natural and is in no way a sign of a defect in the wine.
