The Nyons A.O.P. black olive, exclusively of the “Tanche” variety, comes from our orchard in Vinsobres. Placed in brine (water and salt), the olives are preserved for a minimum of 6 months to remove bitterness. The olives then become confit and reveal fruity and woodland aromas, offering roundness and smoothness when tasted.
