Description
The vines are between 5 and 10 years old. They are trained using the Cordon de Royat method. Yields do not exceed 30 HL/ha, allowing us to obtain wines with strong aromatic concentration.
Our white grape varieties are exclusively hand-harvested in small 10 kg crates, in order to carry out sorting at the vine, selecting the healthiest bunches. Following this, the grape clusters undergo total destemming.
Direct pressing allows for juice extraction, followed by alcoholic fermentation, which takes place in traditional concrete tanks.
It then undergoes an aging period in 225 L oak barrels for 6 months, adding richness, roundness, and good aromatic structure.
A slight natural deposit of tartrate crystals may form over time. This deposit is entirely natural and is in no way a sign of a defect in the wine.
